Having the appearance of a very firm-textured cloud of sorts, cauliflower is made up of creamy white to very snowy white tightly packed florets produced on a single stalk. This compact head of undeveloped white flower buds is known as the "curd". Varying in size, size does not affect the quality or flavor. Releasing a distinctive odor when cooked, cauliflower contains sulfur compounds that release a characteristic pungent smell. Brief cooking helps to minimize some of the odor. Prepared much like collard greens, the hearty outer green leaves of cauliflower are also edible.

Medium to light green, celery's fresh edible leaves can be used like an herb. Swiss Brown mushrooms, also known as Cremini, Crimini, Honey Brown, Italian Brown, Italian mushroom, Roman Brown and Brown mushrooms. These flavoursome mushrooms are closely related to white Agaricus mushrooms, and are similar in shape with a tan to dark brown colour. The flavour is deeper and earthier than white mushrooms, and their firm flesh means Swiss browns hold their shape well when cooked. Excellent for pasta sauces, risotto and casseroles, or marinate and add to an antipasto platter.
